In the ensuing winemaking revolution many Super Tuscans and other such wines have become very successful and carry quite a price tag to match. And the winemaking regulations were updated.

In the interest of historical accuracy, Tignanello was not the first Super Tuscan. This honor goes to Sassicaia first produced in 1948 by Antinori's cousins who used Bordeaux Cabernet Sauvignon grapes said to have come from Chateau LaFite-Rothschild. Because Sassicaia starts at about $175 we will just have to be satisfied trying the Tignanello.

Let's start with the marketing materials. Description : Consistently one of the most sought-after and collectible wines, this is a must for any cellar. 'Tig' is considered one of Tuscany's best wines, racking up numerous awards and accolades with each and every vintage. This rich and spicy blend of Sangiovese, Cabernet Sauvignon and Cabernet Franc is loaded with blackberry, coffee, tar and truffle aromas. It should be cellared for 2-10 years, or decant it for at least two hours and match it with Beef Wellington or a roasted lamb with a wild mushroom risotto. And now let me introduce the review committee.

Larissa B. is a childhood friend of my daughter. She is a wine and food professional who works for a local, upscale Italian restaurant. Larissa has taught numerous cooking classes and has catered food events attracting several hundred participants. She recently visited Tuscany, focusing on its wine and food. The meal started with lentil soup made from green, yellow, and dark lentils with puffed wheat pasta and middle-eastern spices. The main dish was a rib-steak which had been marinated for two days in a homemade mixture of ketchup, mustard with mustard grains, Worchester sauce, Japanese Mirin sauce, and steak spices. The broiled steak was accompanied by potatoes and a medley of vegetables. We finished this excellent meal with homemade apple cake. I decanted the wine approximately two and a half hours before serving it.

Larissa wrote: "Fruity, full, ruby color. Slightly tannic, very smooth. Much more like a Chianti, lighter than most Super Tuscans that I have had." Harriet wrote: "Smooth, earthy, it's good!, not sweet. Woody taste? Tastes like really good wine, not a heavy wine, kind of fruity, getting more tangy the more I drink."

And now for my review. At the first sips the wine was very, very long. It had lots to it, and was chewy. With the soup, this Super Tuscan was mouth filling. When paired with the marinated steak and accompaniments the Tignatello showed fine acidity with low tannins and was very round. Now for the big question: was it worth $95? Absolutely not. Honestly, I was quite disappointed. To my mind this was a $40 wine. I agree with Larissa, it seemed like a Chianti. To be fair perhaps this wine should have aged for several more years. In any case it really did not meet my expectations. I still remember drinking an Italian Barolo a few years ago at half the price that really outclassed this Super Tuscan. Of course I can remember other Barolos that weren't nearly as good. So I guess I'll have to sacrifice and do some Barolo reviews. And maybe someday I'll review a Sassicaia.

How To Make Lower-Fat Apricot Bar Cookies

APRICOT BARS

1 cup + 2 tbsp whole-wheat flour
1/2 cup all-purpose flour
1/2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1 egg
3/4 cup packed brown sugar
2 tbsp canola oil
2 tbsp frozen orange juice concentrate
1 tsp vanilla
2 tsp butter

Filling:


1 3/4 cups chopped dried apricots
3/4 cup orange juice
3/4 cup water

Cook and stir the apricots, orange juice, and water together in a 1-quart saucepan. Over medium heat, heat just to boiling. Reduce the heat to low, cover and simmer for about 30 minutes, stirring occasionally, or until the apricots are tender and the mixture has thickened. Set aside to cool.

Meanwhile, heat the oven to 350 degrees. Spray a 9-inch square pan with nonstick cooking oil spray; set aside.

In a medium bowl, stir together 1 cup of the whole-wheat flour, the all-purpose flour, baking powder, baking soda, and salt.

In a large mixing bowl, beat the egg, brown sugar, oil, orange juice concentrate, and the vanilla at medium speed until smooth. Stir in the flour mixture just until blended. Reserve 1/2 cup of this dough mixture for the topping. Pat the remaining dough into the prepared pan. Spread the apricot filling over the dough.

To the reserved dough add the remaining 2 tablespoons whole wheat flour and the butter; blend with a pastry blender or a fork until crumbly. Sprinkle over the apricot filling.

Bake at 350 degrees for 25 to 30 minutes or until the top is a golden brown and firm. Cool completely before cutting into 16 bars.

Note: The orange juice replaces some of the fat in this recipe plus the majority of the flour is whole-wheat, thus making this recipe healthier than most bars.

Cooking Tips For Cakes And Batters

Cakes are made lightly by tiny bubbles of air or gas which have been introduced into the mixture during the making. The air or gas is usually introduced by one or more of the following ways:-

  • Air is incorporated into the flour during sieving or rubbing in.
  • Air is beaten into the mixture as in batters, or during the creaming of fat and sugar in a creamed mixture.
  • A chemical raising agent such as baking powder is used to introduce bubbles of gas into the mixture.


Most cake mixture is made light and spongy by two or all three of these methods.

The action of baking powder.

Baking powder consists of an acid such as cream of tartar and an alkali, usually bicarbonate of soda. These two substances are mixed together in the correct proportions and when moisture is added, effervescence takes place and tiny bubbles of carbon dioxide are given off. When heat is applied to the mixture, more gas is given off and at the same time the heat expands the bubbles of gas which will make the mixture well risen and spongy.

The action of baking powder is a quick one. It starts as soon as moisture is added and after a while it works itself out. It is therefore important to remember that any mixture containing a chemical raising agent should be cooked as soon as possible after mixing, otherwise the action will have worked itself out before the cake is in the oven.

Preparation of cake tins

It is necessary to grease the baking tins or patty tins to prevent sticking. This can be done by rubbing the inside of the tin with greased paper, or by brushing with melted fat until the bottom and sides are evenly coated with a thin film of fat. The tin can then be dredged with flour and any excess flour should be removed by turning the tin upside down and gently tapping all over the sides. Cakes baked in 'greased and floured' tins have nice crusts and are very easy to remove from the tins.

The high sugar and fat content makes creamed cake mixtures burn more readily than plain cake mixtures. It is therefore better to line tin for rich cakes. To line a round tin, take a strip of greaseproof paper ½" higher than the tin. So that it will be long enough to go right around it. Fold up ½"along one long edge of the strip of paper and snip the folded strip at 1" intervals. Fit this strip inside the tin so that the snipped edge lies flat on the base of the tin. Cut a round of paper the size of the base of the tin and fit this round of paper on top of the snipped edge of the paper. Sandwich tins need only be lined at the bottom. Grease the sides and lined base to prevent sticking.

  • 1/2 cup butter, softened
  • 1/3 cup egg substitute

  • 1 cup buttermilk
  • 1 cup fresh or frozen blueberries

Preheat oven to 350 degrees. Spray a 12-cup muffin pan with nonstick cooking spray or line cups with paper liners; set aside.

In a medium mixing bowl combine the flour, cornmeal, baking powder, baking soda, salt and Splenda. In a large mixing bowl, blend the butter until light and fluffy. Slowly add the egg substitute. Scrape down the sides of the bowl and continue to mix until the butter forms small lumps. Add the vanilla and buttermilk to the butter mixture; mix well. Add the dry ingredients to the wet ingredients in three separate batches, mixing well and scraping down bowl after each addition. Gently fold the blueberries into the batter. Scoop the batter into the prepared muffin cups, filling each almost to the top. Bake in the preheated 350 degree oven for 20 to 25 minutes or until done.

LIGHT BLUEBERRY SCONES
  • 3 cups reduced-fat biscuit baking mix
  • 3/4 cup whole wheat pastry flour
  • 1/4 cup canola oil
  • 3 tbsps Splenda Blend for baking
  • 3/4 cup fresh blueberries
  • 1/2 cup plain low-fat yogurt
  • 1/2 cup low-fat milk
  • 1 to 2 tsps cinnamon/Splenda mixture/optional

Preheat oven to 400 degrees.

Lightly coat a baking sheet with nonstick cooking spray; set aside.

In a large mixing bowl, combine the baking mix and pastry flour. Cut the oil in with a fork or two knives until mixture resembles coarse meal. Add the Splenda Blend and blueberries; mix lightly.

Beat the yogurt and milk together in a small bowl; add to the flour mixture. Stir just until blended and a soft dough forms. Over-mixing will make the scones tough! If the dough seems too dry add a little milk, one tablespoon at a time. Flour your hands and pat the dough into a round shape or use a rolling pin and roll into a 1 1/2-inches thick circle. Score the circle into 16 wedges.

If desired, mix some Splenda Blend with some cinnamon to make 1 to 2 teaspoons of mixture. Sprinkle over the dough.

Place on the prepared pan and bake 10 to 12 minutes at 400 degrees. Remove from the oven and cut the wedges apart. Bake another 3 or 4 minutes until golden brown.

How To Make A Low-Sugar 7-Up Cake That Is Okay For Most Diabetics

If you are a severe diabetic, perhaps this cake is not okay for you. But for the majority of diabetics, those whose blood sugar is under control, or those with pre-diabetes who are watching their sugar intake, this cake is generally okay. If you have severe diabetes, instead of using the 1/2 the sugar cake mix, use a specialty sugar-free white cake mix. And a reminder to all of us diabetics, everything in moderation. Have a piece of cake, not half a cake!!

DIABETICS 7 UP CAKE

  • 1 box half the sugar white cake mix
  • 1 box (4-serving size) sugar-free instant lemon pudding mix
  • 10 ounces diet 7 Up soda
  • 3/4 cup canola oil
  • 4 eggs, separated

Preheat oven to 350 degrees. Lightly grease and flour three 8-inch round cake pans; set aside.

In a medium mixing bowl combine the cake mix, pudding mix, 7 Up, canola oil, and the four egg yolks. Blend mixture on low speed of electric mixer until combined. Beat on medium speed for two minutes.

In a second bowl, beat the egg whites until they are stiff. Gently fold into the cake mix mixture. Pour batter into the prepared pans. Place pans in oven and bake at 350 degrees for 30 to 35 minutes or until a wooden toothpick inserted in the center comes out clean. Remove from oven and cool in pan for 3 to 5 minutes. Remove from pans and cool completely on wire racks.

FILLING:

  • 1 cup evaporated milk
  • 1 cup Splenda granular
  • 3 egg yolks
  • 1 stick butter
  • 1 tsp vanilla
  • 1 small can crushed pineapple in its own juice, drained
  • 1 can unsweetened coconut

Combine the evaporated milk, Splenda granular, egg yolks, and butter in a 2-quart saucepan. Stir together over low heat until blended. Cook over medium heat, stirring frequently, until the mixture thickens; 10 to 12 minutes. Remove from heat and add vanilla, pineapple, and coconut. Stir to blend well. Place one cooled cake layer on serving platter. Top with one-third of the filling and spread over the top of the layer. Repeat the process with the two remaining layers and remaining filling ending with the filling.

How To Make A Mean Matzo Ball Soup

The Matzo Ball soup is the Holy Grail of Kosher food. The Matzo Ball, or knaidel/ knaidelach, has been around for millennia. It all began when Moses led the Jews through the desert. A young boy while wandering with some matzo in hand, found a hot spring. He knew that simply dunking the matzo in the water wouldn't be any good, so he crumbled his matzo in his hand and molded it into a ball. He somehow was able to bind it together - perhaps he had a chicken with him at the time, perhaps with divine aid - and when he tried his creation, he found a delicious alternative to eating flat matzo. This practice evolved into the modern matzo ball soup that we know and love today. (Maybe). Everyone knows what matzo ball soup is, it's a kid-friendly kosher meal, and even Gentiles frequently enjoy it. There are, however, many differing qualities that distinguish good matzo ball soup from bad. So if you really want to impress your guests this Passover, or heck, even if you want to change up the pace on Sabbath, follow these instructions.

1. To really get that fresh taste, we have to prepare the poultry. Wash a turkey neck that has been cut into pieces, and add one pound of chicken wings. Then place them into a large soup pot, and fill it with water until the meat is submerged at the bottom with about two inches of water on top.

2. Bring to a roiling boil. Scrape any froth from the top of the water.

3. Next it's time to add the veggies. Take 3-4 carrots, 3 zucchinis, 3 celery sticks, 2 small onions, 1-2 small parsley roots, an optional piece of pumpkin (which you should add, because pumpkin happens to be extraordinarily healthy for you and your family), some fresh parsley, and spices to taste, with some chicken soup powder. Bring them to a boil.

4. Lower the heat to a simmer. Let it go for two hours, and allow the steam to escape. If the water level dips below the vegetables, just add some more.

5. During this time, you can prepare the sacred matzo balls. Take 4 egg whites, 4 tsp. of water, 4 tsp.



Easy Breaded Pork Chops And Velveeta Macaroni And Cheese Bake

When you don't feel like making a big effort to make dinner for the night, you need a simple dinner plan that you can count on to deliver a tasty meal. There's nothing easier to prepare than the humble pork chop.

Like chicken, pork chops are great for preparing cheap, easy meals that still have that good, old fashioned homemade taste. While plain pork chops are good, breaded pork chops are even better. But, at first, it may seem like a little too much work for a simple meal.

Fortunately, there's an easy way to make breaded pork chops. As you'll see in our Easy Breaded Pork Chops recipe, all you need is a package of chops, some flour, eggs, crushed crackers and some margarine.

Even someone who doesn't cook much can whip up these chops in no time.

=> Easy Breaded Pork Chops

6 pork chops, 1/2 cup of flour, 2 eggs, beaten, 15 Ritz style crackers, crushed, 2 tablespoons of margarine.

Add the flour to a medium sized bowl. In another bowl, beat the eggs. In a third bowl, add in the crushed crackers.

In a large skillet, melt the margarine over medium heat.

Coat each pork chop on both sides in the flour, then in the eggs, then dip in the cracker crumb mixture. Cook the chops on both sides until completely done and no pink is showing.

BONUS RECIPE

=> Cola Pork Chops

1 cup of ketchup, 1 cup of regular cola (any brand), 2 tablespoons of brown sugar, 8 pork chops, salt and pepper to taste.

Preheat the oven to 350 degrees.

In a bowl, combine the ketchup, cola and the brown sugar.

Place the pork chops into a baking dish and pour the cola mixture on top. Be sure to coat the chops well. Sprinkle the chops with salt and pepper.

Bake for 1 hour or until the chops are completely done.

Now, you need a great side dish to go along with your pork chops. Macaroni and cheese made with Velveeta cheese is a classic that many people love. Keeping with our simple dinner theme, all you need to make this delicious dish is a box of macaroni, some butter and flour, milk, and of course, Velveeta cheese.

=> Velveeta Macaroni and Cheese Bake

1 (16 oz.) box of Macaroni '“ uncooked, 1/2 cup of butter or margarine, 1/2 cup of all purpose flour, 4 cups of milk, 1 (14 oz.) package of Velveeta cheese, cut into chunks, salt and pepper to taste, 8 slices of Velveeta cheese.

Preheat the oven to 350 degrees. Prepare a 13x9-inch baking dish with cooking oil or spray.

In a large saucepan, melt the butter over medium heat. Whisk in the flour and milk. Cook over medium heat, stirring constantly, until mixture begins to bubble and thickens.

Put in the chunks of Velveeta and allow them to melt. Add in the salt and the pepper.

Pour the uncooked macaroni into the baking dish, then pour the cheese sauce over the macaroni. Bake for 20 minutes. Remove the dish from the oven and place individual cheese slices on top.

Return the dish to the oven and bake for an additional 5 minutes, or when you see that the cheese slices on top have melted. Allow dish to cool for 5 minutes before serving.

Antioxidant Rich Foods

Antioxidants are molecules capable of curtailing or arresting the consumption of oxygen by other molecules. Oxidation produces free radicals, which initiate a chain reaction and damages cells. Antioxidants attach themselves to free radicals and inhibit the oxidation process. These Old-Fashion Beef "birds" Are Made With Round Steak. Try Them Soon!

I am a firm believer in family-style meals at home several times a week for today's busy families. This is a time for family bonding, discussion, and passing on family values to the younger generation. Call me old-fashion but I do believe that a lot of our old-fashion recipes are the best route to go here. They are easy, usually inexpensive, mostly healthy or can be adjusted to be, and they are tasty. This recipe is a perfect example. The ingredients are relatively inexpensive, easy to prepare, and can easily be adjusted to make it more healthy by using lower-fat cheese, canola oil instead of solid shortening, and cutting the amount of salt in half.

OLD FASHIONED BEEF "BIRDS"
This recipe is another from the area where I grew up in Southern Indiana.

1 1/2 lb round steak
1/2 lb fresh mushrooms
1/2 cup chopped onion
1 cup grated Cheddar cheese
1/4 cup flour
1 tsp salt
1/4 tsp pepper
3 tbsp shortening
1 can condensed consomme
1/2 tsp dry mustard

Cut the steak into 6 serving pieces and pound with a meat mallet or the edge of a saucer.

Chop the mushrooms and mix with the onion and Cheddar cheese. Put 3 tablespoons of the mixture in the center of each piece of steak; reserve remaining mixture. Roll the beef pieces jellyroll style and fasten with a wooden toothpick. In a shallow dish or pie plate, combine the flour, salt, and pepper. Dredge the meat rolls in the flour mixture, rolling to cover all sides.

Melt the shortening in a large skillet and brown the meat rolls in the skillet. Pour off the drippings. Combine the consomme and dry mustard; add to the skillet with the steak rolls. Cover and cook slowly for 45 minutes. Add the remaining cheese mixture to skillet and continue to slow cook for another 45 minutes. If desired, thicken the liquid with some cornstarch or flour to make a gravy to serve over the steak rolls.



How To Make A Variety Of Banana Pies

Who doesn't love Banana Pie. Most of us have eaten various forms of Banana Cream Pie but these recipes make it easy to expand on the world of Banana Pie. Try these recipes and create some scrumptious desserts; Banana Cream Cheese Pie, Banana-Mandarin Orange Pie, Banana Coconut Chocolate Cream Pie.

BANANA CREAM CHEESE PIE

1 9-inch graham cracker crumbs pie crust
1 pkg (8-oz) cream cheese, softened
1 (14-oz) can sweetened condensed milk
1/3 cup bottled lemon juice concentrate
1 tsp vanilla extract
4 medium bananas

In a large mixing bowl, beat cream cheese until fluffy. Gradually add in the sweetened condensed milk while whipping until smooth. Stir in lemon juice and vanilla. Slice 2 bananas, dip in some lemon juice to avoid discoloration. Drain bananas and line the bottom of the crust with the bananas. Pour the creamed mixture over the bananas. Cover pie and refrigerate at least 3 hours until set. Before serving, slice remaining bananas, dip in lemon juice, then in graham cracker crumbs and use to garnish the top of the pie. Refrigerate any leftovers.

BANANA-MANDARIN ORANGE PIE

1 Graham cracker pie crust
1 pkg (8-oz) cream cheese, softened
1 can (14-oz) sweetened condensed milk
1/3 cup lemon juice
1 tsp vanilla extract
3 firm bananas
1 can (15-oz) mandarin oranges, well drained

In a large mixer bowl, beat the cream cheese until fluffy. Gradually beat in the sweetened condensed milk until the mixture is smooth. Stir in the lemon juice and vanilla extract.

Slice 2 of the bananas and dip in some lemon juice; drain. Line bottom of the graham cracker crust with the sliced bananas and 2/3s of the oranges. Pour the filling over the bananas and oranges. Cover and chill for 3 hours or until set.

Before serving the pie, slice the third banana, dip slices in lemon juice and drain. Garnish the top of the pie with the banana slices and the remaining orange segments.

Be sure to refrigerate any leftover pie.

Yield: 8 pie slices

BANANA, COCONUT, CHOCOLATE CREAM PIE

1 1/3 cups cold water
2/3 cup nonfat dry milk powder
1 pkg (4-serving size) instant chocolate pudding mix
1 cup whipped topping, divided
1/2 tsp coconut extract, divided
2 (medium) ripe bananas, cut into 1/4-inch slices
1 chocolate crumb pie crust
1 tbsp flaked coconut, toasted

In a bowl, combine water and dry milk powder stirring until the milk powder is dissolved. Add the pudding mix and whisk with a wire whisk for a minute or two until thickened. Fold in 1/4 cup of the whipped topping and 1/2 the coconut extract. Layer the banana slices in the crumb pie crust. Top the bananas with the pudding mixture. Cover and refrigerate.

Meanwhile, combine the remaining 3/4 cup whipped topping and the remaining coconut extract. Spread over the pudding. Sprinkle with the toasted coconut. Cover and refrigerate for at least an hour before serving.
